What is it?

Citrus fibre is a dietary fibre derived from the peels of citrus fruits such as oranges, lemons, limes, and grapefruits. Citrus peels are rich in pectin, cellulose, and hemicellulose.

It is a natural and sustainable ingredient that is increasingly used in food and beverage products for its various functional and nutritional benefits.

Appearance: Citrus fibre is an off-white powder with a neutral taste and odour.

Functionalities

Water Binding Capacity: Citrus fibre has a high water-holding capacity, which helps retain moisture in food products. This is particularly useful in baked goods, meats, and sauces to prevent them from drying out and to maintain a desirable texture.

Emulsion Stability: Citrus fibre helps to blend and stabilize mixtures of oil and water. This is beneficial in products like salad dressings, mayonnaise, and creamy sauces, where a stable emulsion is essential.

Texture Enhancement: Improves the texture and mouthfeel of various products.

Nutritional Enrichment: Adding citrus fibre increases the dietary fibre content of foods, contributing to improved digestive health.

Fat Replacement: Citrus fibre can mimic the mouthfeel and texture of fats, allowing for the reduction of fat content, making it a useful ingredients in low-fat formulations.
