Though is it really possible to replace traditional go-to protein sources found in meat and dairy with plant based alternatives such a soy, wheat, fava or pea?

Put simply, yes. With even broader functionality than meat and dairy protein sources, in many cases the plant based alternative creates a far superior product.

Supply chain compatability?

It’s almost unavoidable that food manufacturers consider introducing plant based ingredients into their formulations. Though from a manufacturing perspective the transition is not always so straight forward and some of the questions we are frequently asked therefore relate to functionality and use.

However it’s maybe easier than you think as many of these ingredients require no additional processing, with nothing more complex required than using any other raw ingredients.

Furthermore, with some protein acting as thickening and gelling agents, others as stabilisers of emulsions and foams, and even binding agents for fat and water, the extent to which plant derived protein can be integrated into your formulation is far greater and with far less logistical challenges than you might first expect .

Protein formats?

We supply a wide range of innovative alternative proteins that are derived from non-traditional plant based protein sources, and each allowing for a diverse range of product application. Soy, wheat, hemp, fava, pea, and oat based protein ingredients are each available in several formats and to various specifications.     Wheat

    It is possible to produce wheat protein isolate first through a process of wet-milling. With careful drying the remaining high protein fraction avoids protein denaturation so as to retain the viscoelastic properties of glutenins and gliadins.

  • Meat alternative.
    Soy

    Soybeans are processed into ingredients like soy protein isolate and soy flour, which are used in a wide range of food products, including meat substitutes, dairy alternatives, and baked goods. Most soy proteins are derived from “white flakes,” made by dehulling, flaking and defatting soybeans by hexane extraction.

    Pea

    As a result of their high protein content, peas have become a valuable raw ingredient for the production of pea protein isolate and pea protein concentrate. Both are prepared by dry or wet milling of dehulled peas and then have a process of separation.

    Oat

    Much like other cereal grains due to a rich nutrient count, oats are commonly used as a base for protein. Extracting oat proteins from oat flours and oat brans has been proven to be most effective via wet extraction methods.

  • Hemp protein.
    Hemp

    Hemp protein is quite simply obtained by removing the hemp seed oil using a cold expeller press before the remaining meal is milled into protein powder.

    Fava

    Fava is rich in protein, fibre, vitamins, and minerals, making the beans a nutritious addition to meals. The two different methods used for extraction of proteins from fava beans are soaked extraction and alkaline extraction.

So there you have it, plant based proteins are well positioned right across the entire food and drink category and represent the most significant shift within a changing consumer landscape. Formulating with plant based proteins will not only help you align with the needs of the modern consumer, but they are low cost and in many cases much easier to work with.

Furthermore, they fulfill numerous functionalities previously not possible with animal based products meaning you can achieve several functional objectives with a cleaner label.
