It possesses the following characteristics:
Thickening Agent – Potato starch can absorb water and form a thick gel, making it ideal for thickening soups, sauces, and gravies.
Binding Agent – Acts as a binder in dry mixes, helping to hold ingredients together once hydrated.
Anti-Caking Agent – Prevents products, such as grated cheese, from clumping together by absorbing excess moisture, ensuring it remains free-flowing.
