Granular (Cook-Up) vs. Pregelatinised (Pre-Gel) Starches

Cook-up starches need heat to thicken, making them ideal for cooked products like soups and sauces. Pregelatinised starches, thicken instantly in hot or cold liquids—perfect for no-cook applications like dressings or dessert mixes.

Clean-label pre-gels support simple declarations but may lack the smoothness of modified versions and come at a higher cost. Modified pre-gels offer better texture and processing stability but typically require E-number labelling.
