Formulation Notes
A few practical starting points from our team:
Switching from granulated salt If you dose by weight, start at a like-for-like rate and trial reductions in steps from there. If you dose by volume, recalculate first: a scoop of Alberger® salt weighs significantly less than the same scoop of granulated.
Sodium reduction The reduction comes from flavour efficiency rather than substitution. Because more of the salt reaches the tongue and dissolves before swallowing, a smaller quantity can deliver the same perceived saltiness. In one consumer sensory study, breadsticks made with 25% less sodium using Alberger® Fine Flake were rated just as highly as the full-salt control.
Topical application For seasoning lines, Fine Flake and Fine Flour grades give the best adherence. Check applicator settings after switching, as the lower bulk density changes how salt flows through volumetric dispensers.
Choosing a flow agent Additive-free grades suit clean-label products. Where free-flowing performance in humid conditions matters more, grades with anti-caking agents are available.
