What is Salt PDV

PDV stands for Pure Dried Vacuum. It is sodium chloride (NaCl) produced by evaporating purified brine under vacuum, giving one of the purest and most consistent forms of salt available for manufacturing.

How it is made

  1. Brine extraction – water is pumped into underground rock salt deposits to dissolve the salt, and the resulting brine is brought to the surface.
  2. Purification – the brine is treated to remove calcium, magnesium and sulphate impurities, along with any insoluble material.
  3. Vacuum evaporation – the purified brine is boiled in a series of closed vacuum pans. Lower pressure means a lower boiling point, so evaporation is efficient and tightly controlled.
  4. Drying and screening – the crystals are separated, dried and screened to the required particle size, with anti-caking agents added if needed.

The result is a salt with:

  • Very high purity – typically 99.8% sodium chloride or higher, with very low moisture and insolubles.
  • Small, uniform cubic crystals – for accurate dosing and even distribution.
  • A clean, consistent salty taste – without the bitterness or variability that trace minerals can bring.
  • Reliable flow – dry, free-flowing crystals that handle well in silos, hoppers and automated dosing systems.

Why Anticaking (E535)?

Salt naturally attracts moisture. When humidity rises and falls during storage, a thin film of brine forms on the crystal surfaces, then dries and bonds neighbouring crystals together. The result is lumps, hard blocks and blocked hoppers.

E535 is sodium ferrocyanide, an anticaking agent used in salt across the UK and Europe. It works by changing how salt crystallises at the surface, so crystals cannot bridge together as moisture comes and goes. In practice this means:

  • Free flow in storage – salt stays loose through long storage and changing warehouse conditions.
  • Reliable automated dosing – no lumps or bridging in silos, hoppers and feeders, so lines keep running.
  • Very low addition rates – UK and EU rules permit ferrocyanides in salt at a maximum of 20 mg/kg, so the salt remains almost pure sodium chloride.
  • No effect on taste or solubility – it dissolves fully and does not change how the salt performs in the final product.

Formulation Notes

Purity matters in brines and fermentation Calcium and magnesium in less pure salts can affect cheese texture, cloud brines and cause scaling in equipment. PDV’s low mineral content keeps brines clear and results predictable.

Making brine PDV dissolves cleanly with very little insoluble residue. A saturated brine at room temperature holds around 26% salt by weight, roughly 360 g of salt per litre of water.

Labelling Where salt is used as an ingredient, the anticaking agent usually has no technological function in the finished food and may not need to be declared separately. Confirm the position for your product with your technical or regulatory team.

Storage Store in a cool, dry place in sealed packaging. The anticaking agent keeps the salt free-flowing, but prolonged exposure to high humidity should still be avoided.

Reducing sodium PDV is often the starting point for sodium reduction work. Step reductions, partial replacement with potassium chloride, or switching some applications to faster-dissolving specialty salts such as Alberger® can all reduce sodium with minimal impact on taste.
